Maggie Goreng (Mamak-Style)

Ingredients

Prepare ingredients: finely chop garlic, shallots and chilli; slice fish cakes; cut the greens into sections.
Cook noodles: bring water to a boil, cook noodles for about 2 minutes until just tender. Drain and set aside.
Pan-fry fish cakes: heat oil over medium-low heat and fry fish cakes until lightly browned. Set aside.
Cook eggs: using the same pan, fry eggs with a little Maggi seasoning and pepper until lightly crispy. Set aside.
Sauté aromatics: add a little oil and sauté garlic, shallots and chilli over low heat until fragrant.
Add vegetables and noodles: increase to medium heat, add greens, followed by noodles and eggs. Toss well.
Add seasoning: mix Maggi curry seasoning with a little water, pour into the pan and stir-fry until evenly coated.
(Optional) Add chilli: add bird’s eye chilli sauce and a splash of soy sauce for deeper colour and flavour.
Finish: increase heat slightly, add fish cakes and toss briefly. Turn off heat, plate up and squeeze lime juice before serving.
